Ćevapčići are at the heart of Balkan cuisine. These small, grilled minced meat sausages are simple in design but rich in flavor. Originally from the region of former Yugoslavia, you can find them everywhere today: from street stalls to family tables and summer barbecues.
What makes this dish so strong is the balance. The soft bread soaks up the juices of the meat, kajmak provides creaminess, ajvar adds that distinctive roasted bell pepper flavor, and a fresh counterpoint like onion or pickle completes the dish.
Ingredients (4 servings)

500–750 g Ćevapčići

4–6 somun or lepinja

100 g kajmak

80–100 g ajvar

100 g sauerkraut

4–6 pickles

1–2 red onions (in thin rings)

Cockta to taste
Preparation
1. Heat a grill pan or barbecue well. Grill the Ćevapčići for 8–12 minutes until golden brown all over. Turn them regularly so they cook evenly and stay juicy.
2. Cut open the bread and briefly warm it on the grill or in the oven. It should remain soft but lightly crispy on the outside.
3. Slice the red onion into fine rings. Drain the sauerkraut and, if desired, cut the pickles into pieces.
4. Generously spread the bread with kajmak. Place the warm Ćevapčići on top and add a spoonful of ajvar. Finish with onion and, if desired, pickle or sauerkraut.
Serve immediately, with a cold glass of Cockta.
