Balkan Grah / Pasulj: bean stew with suho meso and sauerkraut

Grah, or pasulj, is the kind of dish you don't make for show. This is pure food: nutritious, full of flavour, and made to fill you up. In the Balkans, this was a staple on the tables of many families.

Slow-cooked beans form the base. Soft, creamy, and incorporated into a spicy sauce. With suho meso, the whole dish gets that deep, smoky flavour it's known for. Sauerkraut on the side provides contrast: fresh, slightly sour, exactly what it needs to stay balanced. And as with many stews: it's even better the next day.

Ingredients (3–4 servings)

  • 1 package grah (bean stew)

  • 150–200 g suho meso

  • 150 g sauerkraut

  • 1 onion (optional)

  • 2 cloves garlic (optional)

  • Bread or lepinja to taste

Preparation

1. Cut the suho meso into coarse pieces and sauté briefly. It doesn't need to be crispy, just lightly cooked to release the flavour.

2. Add the grah to the pan and heat over low to medium heat. Stir occasionally to prevent sticking.

3. Optionally add onion and garlic and let the whole thing simmer gently to develop its flavour. Give it time; this dish improves when you don't rush it.

4. Serve the sauerkraut on the side, cold or lightly warmed. That freshness makes all the difference.

5. Spoon into deep plates and serve with bread or lepinja to soak up the sauce.
